THIS MONTH’S RECIPE

French Toast Bites

INGREDIENTS

8 eggs

6 slices of bread

1/4 cup milk

1/2 cup applesauce

1 teaspoon cinnamon powder

1/2 teaspoon vanilla extract

2 tbsp butter

Maple syrup for serving

DIRECTIONS

1. In a bowl, mix together 2 eggs, milk, applesauce, cinnamon powder and vanilla extract. Set aside.

2. Using a cookie cutter, cut out the center of each slice of bread. Place the cutouts in one pile and the bread slices in another.

3. Heat a skillet over medium heat and add 1 tablespoon of butter.

4. Dip each cutout shape into the applesauce mixture until fully coated and then place into the hot frying pan. Cook 3-4 minutes on each side, until turning golden and beginning to crisp. Remove from pan and add the remaining butter. Place the bread slices into the pan and crack one egg into the center of each one. Cook for 2-3 minutes, then carefully flip the bread to cook the other side.
